  • 1 block (400g) extra-firm tofu, cubed

  • 1 tbsp coconut oil
  • 2 tbsp tamari or soy sauce
  • 1 tbsp maple syrup
  • Juice of 1 lime
  • 1 cup fresh basil leaves
  • Salt to taste

For garnish:

  • Chopped cilantro
  • Crushed peanuts
  • Lime wedges

Instructions

  1. If you haven’t already, cook your brown rice according to package instructions. Set aside.
  2. In a large skillet or wok, heat the coconut oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the pan and set aside.
  3. In the same pan, add the green curry paste and fry for 1-2 minutes until fragrant.
